the moral of the story is...

Hello all!

I would like to tell you about my little experience I had this weekend with my fantastic fiance. 

Tom and I have both lost around 10 pounds and have seemed stuck at that weight for a while now.  So we decided to "splurge" one night so our bodies could have something to burn off even more.  I was more than excited to go all out.  However, I probably should not have done it the way I did...

We went to our favorite Mexican restaurant and I ordered my usual that I used to get before going on this diet.  I ate all of it and more.  About 15 minutes after I finished, I went to the ladies room and was very nauseous.  After I was done being nauseous...., I felt fine!  I felt like maybe my food just was too much... that was until I got home and was ....nauseous... even more. 

The moral of my story is that I just sent my body into shock.  I have been eating healthy for a little over 2 months and I completely messed my body up by having the worst food possible for me. 

So, just be careful if one day you are going to decide to go all out and eat whatever you want.  Chances are, Mexican food is probably not the best idea.  Start slow!

Enough of the gross stuff...  Here is what is on our menu for tonight..  If you feel like eating after all that. =)

Tacos and taco salad... YUM!

*Cook taco meat as normal. (you can also throw some chicken in there for chicken lovers like me)
*For kiddos or other people not on a low carb diet, get regular tortillas. 
*Stores also have low carb tortillas that have about 4-6 carbs, depending on the size.
*Or just cut up some lettuce, slap all the taco toppings on the salad and there you go.

We usually use tomatoes, onions, cheese, salsa, cilantro, sour cream, etc for our toppings.  You can also use guacamole.  All those veggies are good carbs!

This is an easy meal to fit everyone's needs in the family.

What can you even eat?!

When I tell people I am on a low carb diet, the first thing everyone always asks me is "What can you even eat?" I kind of laugh now that I hear it because everything I eat now seems so normal.

So what can you eat if you want to do a low carb diet? It's simple...

For breakfast, I eat 2 scrambled eggs with shredded cheese melted on top.  I also sometimes eat a few pieces of bacon, since bacon has no carbs!


Most meats have no carbs. Chicken, fish, ham, turkey, steak, pork, bacon, pepperoni, sausage, etc...
There are millions of meals you can create with simple meats.

Side dishes? No problem.
Vegetables such as green beans, baby corn, okra, broccoli, cauliflower, artichokes, salad, etc...

On a low carb diet you really have to make sure you are having your main carbs in veggies. If you are on a 20 carb diet, you at least want to have 10-15 grams of carbs in your veggies. 

Tonight on our menu, we are having a recipe that I found on Pinterest.  It is probably my favorite recipe to cook.  We will pair it with steamed broccoli with lemon juice squeezed over the broccoli and a salad.

Ginger and Cilantro Baked Tilapia

 serves 2
1 pound domestically farmed tilapia fillets
Kosher salt and freshly ground pepper
3 garlic cloves, peeled and smashed
1 inch fresh ginger, grated, about 1 tablespoon
1 jalapeño pepper, roughly chopped (optional)
1/3 cup roughly chopped cilantro leaves
1/4 cup white wine
2 tablespoons soy sauce
1 teaspoon sesame oil

Extra cilantro, to garnish

*I also squeeze lime juice over the fish after it is done cooking.

Heat the oven to 475°F. Pat the fish dry, season lightly with salt and pepper, and lay in a 9x9-inch or 8x8-inch ceramic or glass baking dish.
Put the garlic, grated ginger, chopped jalapeño, and cilantro in a small food processor with the white wine, soy sauce, and sesame oil. Whir until blended.
Pour the sauce over the fish, rubbing it in a little. Bake for 10-15 minutes, or until fish is cooked all the way through. 

This recipe comes out to be about 2.5 carbs with 0.5 fiber, making it about 2 carbs and only 264 calories!


** We also serve this over chicken for Tom's kids who do not like fish and it tastes just as good.

Piece of Cake

Thanks for reading yesterday. I got 82 views! That is 81 more than I expected!

Now lets get down to business...

I am the odd ball of my family.  My dads birthday is in February. My sisters and nephews are in March.  My mom and brothers birthdays are in April. Toms birthday is in May.  It is continuous throughout the months.  However, my birthday is all the way in October. With my families birthday all back to back, that means almost 9 birthday cakes within 4 months.  MMMM birthday cake.  I love me some birthday cake.  However, being on this diet, I have to resit that yummy cake. 

Even though I cannot have all the sweets I would like to have, I do have some other options. There are plenty of ways to satisfy your sweet tooth without having 30 carbs in one piece of chocolate.

Tip #2...
Get sugar free candy.  Most sugar free candy has one to none carbs!  Sugar free candy has saved my life when I have my sweet tooth hit.  My favorite is Russell Stover's sugar free candy.  They have a variety of kinds of chocolates you can choose from. Crispy Carmel is my favorite.  It tastes just like a 100 Grand!

Have an ice cream crave? No problem!  There is an ice cream brand called Carb Smart.  I have only found vanilla and ice cream bars here in Oklahoma.  I even melted a sugar free Hershey bar and put it on top of my ice cream. Yum!
So next time you think about starting a diet, keep these options in mind.  You CAN do it! It just takes effort!
I encourage you to start with eliminating your "real" sweets first and make the switch to sugar free.  Then, once you see that you can accomplish that start with your main meals of the day. And how do you manage those? You gotta come back and read more!

Newbie

This is my first time blogging so bare with me.  I need a place to vent sometimes.  I also would like to share with you my experiences while trying to get in shape for a wedding and save money!! Those two things are the hardest tasks I have tried to accomplish in my past few months. 

I have been dancing since I was 4 years old. When I was in high school, I would dance 3-4 times a week for about 4 hours.  I was in the best shape of my life.  Then life happened after high school.  College happened.  Pizza, chicken tenders, brownies... anything was fair game.  However, I stepped on the scale about 6 months ago and my jaw dropped.  Something needed to change! 

So, my wonderful fiance and I took the challenge of eating healthier.  Not just by watching our calories or eating more fruits and veggies.  I mean really eating healthy.  We decided to take on the Atkins challenge. Yes... LOW CARB.  Meaning no more pizza, no more chicken tenders, and no more brownies. We try to limit ourselves to 20 carbs a day.  I thought I was going to cave within the first week. However, I am one month into it and have lost 5 pounds!   5 pounds is a miracle for me because I have never seen weight go away.  I have only seen it add on. 

My brothers girlfriend +Natalie Seefeldt is now looking at trying to go low carb and I am here to help.  Throughout my posts I would like to post recipes and tips on how to stay on track.  

My first tip:
Get a food tracker for your phone. Or even write it down in a journal so you can see what you are eating.  I use a app called "Lose It."  My fiance uses "My Fitness Pal."  These are both great apps that track your food and exercise.  It will tell you the calories you are allowed to consume in a day.  It also tracks your five letter word- C-A-R-B-S.  I encourage you to try one of these apps so you can have a clear view of how you are eating.
